The rPi chip itself is not rad-hardened, so it'd require a bulky shielding, that'd increase the launch mass, which is a lot more expensive than a more space suited chip. Also, launching into space requires a lot better electronics. Sure, it'd work likely, but .. when a launch is that expensive, you wouldn't accept these risks.
